You bet it can. I do it regularly, and live in a mountainous area to boot. But, as with any car, it's the difference between getting 40+ mpg and getting more like 30+. You can't even tell you aren't driving a regular car. Drive one, you'll see.
I drive my '99 about 600 miles a week, and probably 80% of the time I am going just under 80. Here in Calif. it seems the CHP wont bother with you if you keep it under 80, just last week I had 2 motorcycle officers pass me right by in the carpool lane. I am still getting 36-37 mpg.
I've put about 50 k on it, and am at 102k now.
Yesterday I drove a steep grade on the 271 toll-road in 3rd gear and it kept me ripping along at 75+.

It may be that you're not driving as fast as you think... My wife's 2000 GX speedometer reads 80 mph when you're actually only traveling at 75. It's always done this and it's a good thing because I think it's prevented her from getting any speeding tickets!
